SINCE it's movie night and all....had to share my movie review as well....
We watched Date Night (you know...Steve Carell and Tina Fey...) and it was SOOOO hilarious!  We missed moments here and there due to loudly barking dogs and toddler temper tantrums and lots of questions from the kids....but we still laughed our butts off (oh shoot, nevermind...there it is again!) and had a great time.  A lot of that was due to the company though!  Thank you Coryell's....as always, it was a pleasure!!!

123

Today marks four months (123 days) since we got put on the waitlist.  Even with how quickly those four months have passed for us, another six months just seems too long to wait.  And as you know, our caseworker says she wants us to be prepared to wait the full ten months.  Not to mention the several months it will take after the referral to get Lil Miss home. 

In case you haven't figured it out, I feeling a bit anxious lately.  I know we still have a lot of home preparations that need to be done before Lil Miss gets here, but this is SERIOUSLY the longest. pregnancy. ever.  I'm starting to wonder if Monkey thinks that all this talk about his little sister is just a joke!

If you think of me, please pray for my patience and that I can busy myself with projects.  I could really use some distractions right now.

What's Cookin' Good Lookin'???

My husband and I have tried Ethiopian Cuisine a couple times in the past, but this week we decided to attempt MAKING it.  Can I just say it is very helpful to have an Ethiopian market down the street (and thanks to Deidee for informing me! =)  After reading one of our agency friends, Rebecca's post on her family's experience and their yummy recipes...we just had to give it a GO!  So here is OUR experience (with pictures, of course) and our modified recipe from Rebecca (to read her origional recipe you can visit her blog).

Doro Wat (Traditional Ethiopian Dish - chicken cooked in a spicey sauce)

2-3 pounds of chicken pieces (I used thighs...I think 4 or 5, but I would either add twice as much next time, or half the amount of the rest...)
2 large onions, finely chopped
1 cup vegetable oil
3 cloves garlic, minced
1 teaspoon ginger (called for freshly minced, but I just used what I had in my cupboards)
1/4 cup berbere (more if you like it spicier!)
1/2 - 1 cup water

(Rebecca's recipe also called for koremina, wot kimen, and salt...but when I went to the Ethipian market and showed the owner the recipe, she said it was all mixed with the berbere and that was all I needed to use.  I took her word for it...and it tasted great.)

Directions:
In a large pot, combine onion, garlic and ginger with oil until lightly brown and soft.  Remove from heat, puree slightly in blender.  Return to pot, add berbere.  Continue to simmer for about 15-20 minutes at low heat stirring occasionally, adding a touch of water as needed to avoid sticking.  Add chicken and simmer until chicken is fully cooked.  Serve hot with injera.





Shiro (Vegetable puree...reminds me of a kind of spicey hummus)

1 large onion, finely chopped
3 cloves of garlic, minced
1/2 cup vegetable oil
1-3 teaspoons berbere (I used a heft 1 ;)
2-3 cups water (1 1/2 - 2 for us)
1/2 - 1 1/2 cups shiro (3/4 - 1 for us)
salt to taste (none for us)

Directions:
In a large saucepan, saute onion and garlic in oil until soft, about 5 minutes.  Turn heat off, place in blender and puree.  Return to pan and add berbere and a little water (so it does not stick).  Stir to combine, cook for 3-5 minutes.  Add 2 cups water.  Begin to add 1/2 cup shiro powder, a little at a time so that it does not clump.  We used a wisk to mix ours and added shiro until it was the texture of hummus.


Both of these recipes are meant to be shared with injera, Ethiopia's national bread (its kind of a spongy, sourdough bread with the size of a crepe but the thickness of a pancake-ish).  Rebecca has a great recipe for injera on this post, but since we are blessed with an Ethiopian market here, we bought it freshly made! 

This was such a fun night of experiementing!  We will definately be making these recipes again, only with a couple changes.  Like I said, the Doro Wat we felt needed more chicken...but in all honesty we had SO much left over (since Monkey refused to touch it) that I really think we'll cut the entire recipe in half but leave in the same amount of chicken.  The shiro was REALLY great as leftovers.  We dipped pita chips in it (from Trader Joe's) like hummus.  Its additing...so good I can't stop! =)  The injera stays fresh in your fridge for a while, which is good because I swear we will never finish it!!!

I do have one question...or three for you all!!!  My good friend Niki pointed out how you really say injera (which I, of course, was mispronouncing) but I want to know how you say "doro wat", "shiro", and "berbere".  Its driving me crazy so someone please help!!!  I searched online and had no luck...but it did help me to stumble across this site!  The author shares his experience with Ethiopian cooking, and suggests ways you can use berbere in American dishes....things I am SO excited to try.  I thought I would share the advice here.

1. Meatballs - add ground beef, an egg, breadcrumbs, salt, pepper, and about a tsp on berbere and ROAST!  Um...YUM!!!
2. Mix berbere and olive oil to make a paste to rub on chicken breasts - fry in a pan of butter.  Mmmmmm!  Salivating! ;)
3. Mix berbere into a blend of sour cream and greek yogurt as a dip for as either a dip for veggies or in place of sour cream with grilled meats.  I'm likin' it!
4. 3-1 mix of olive oil and berbere...toss in fresh garlic and spread over pizza dough.  Top with grated Manchego and bake!  Wow...that sounds incredible!

Shaun and Jodi (or Jon and Shodi...as I catch myself calling you guys all. the. time. lately!)  - congratulations you guys!!!  You make BEAUTIFUL babies!  Ryanne is another piece of proof that miracles do happen!  Thanks for letting us love on your sweet girl.

Wasted

I just finished helping my husband load our van full for a trip to the dump.  In the past, our trips to the dump have mostly included dry wall, old metal....stuff from our remodel.  Today, our dump run includes all the left-overs from our adoption yard sale a couple weeks back.  I was on the verge of tears as I was loading in computers, carseats, tupperware, curtain rods and much much more.  I just looked at my husband with eyes welling up with tears and said, "I wish we could just ship it all to Africa."  "I know sweetie," he responded, "but one step at a time, okay?"

Does it every just HIT you how WASTEFUL we are as Americans?  We throw away things of perfectly good use simply because...well, we are using it!  How did we end up so spoiled? 

Its not like we didn't try to get rid of it in other ways either.  I mean we had a YARD SALE, and then we tried donating to Good Will....although they took most stuff, there are certain things they won't accept (carseats - they can't be sure they haven't been in any accidents, computers - have no way to verify they work, and they simply have no room for big items right now).  I wish there was an easy answer...

I think maybe it hit me extra hard because I have just been informed about the dump in Addis Ababa (where Hannah's Hope, our agency's orphanage is...Addis Ababa, not the dump).  A while back, the government sent everyone with leprosy to live in Korah (meaning "cursed") - the dump.  It is completely unbelievable to think that families are surviving by digging through others' garbage!  That they live in the midst of this filth!  Although it was a heart-breaking post to read...it was a real eye opener, and I would totally encourage everyone to check it out HERE if you haven't done so already.

I wish I had an answer.  A solution.  The fact of the matter is, we live in a sinful world.  The poor, homeless, diseased, "cursed", and unwanted....that is the result of sin.  And it is breaking my heart.

Denied

We just got word today that BOTH adoption grants we had applied for have turned us down.  We wanted to let those of you who were praying for us specifically about this know the result...and that we really appreciate you.

Yes, we were disappointed.  But ultimately we know God will provide for this journey.  Maybe this was just too easy for us.  Maybe God just wants us to be more creative in the ways we fund this journey.  Regardless, we have been beyond blessed already by our generous givers and supporters!  Honestly, the hardest part for me to swallow is how much time and effort went INTO those grants.  It was way harder than a college application to me!  (But maybe that's because I actually cared this time around.)  That may sound kind of funny because yes, either of those grants would have been a HUGE blessing for us...but we know that a lot of prayerful consideration goes into the decision of who does and who doesn't get those grants.  We are just going to trust that God was guiding their decisions to those who need it the most and be grateful for what He has provided for us (and He continues to provide).  The most important things are....this will not affect our adoption (just the way we will fund it, lol), the money is going to someone who NEEDS it even more than we do, and ultimately the money will support bringing an orphan home to their forever family.

A Downtown Evening

Monkey and I decided to head out for a night on the town with one of my girlfriends (and her high school girls, who seemed to think it was MASSIVELY boring to be following around a bunch of moms, cool as we may be =P) Karm!  Downtown was hosting a family friendly evening of fun, including free hot dogs cooked by the local police!  It probably would have been perfect for the 4-10 age range, but for two adults, some high school girls, and an almost two-year-old it was just an excuse to get out. 

We walked around and there were a couple of the local businesses with booths....mostly doctors offices, hospitals, kiwanas-type stuff, ect.  But the SWAT team was there with their bus and gear, the K9, the firefighters....there was bouncy houses, face-painting, and clowns blowing up balloon animals....it was pretty fun!

Seattle AGCI/Ethiopia Group Potluck

Niki - I have loved getting to know you more and more through the last few months and your heart for adoption is inspiring!  Thank you for becoming such a wonderful part of our lives.  I am so excited to celebrate WITH you on this next leg of your journey...I get tears just thinking about the excitement to come!  Like you said, next get together is a REFERRAL celebration! =)
